A food allergy is an adverse immune system response that occurs when the body mistakenly identifies a harmless food protein as a threat. When someone with a food allergy eats, touches, or sometimes even inhales traces of the allergen, their immune system releases chemicals such as histamine. These chemicals can trigger a wide range of symptoms, from mild irritation to life-threatening anaphylaxis. Unlike food intolerances, which involve digestion problems, food allergies involve the immune system and can have rapid, unpredictable, and severe consequences.
